This time last month I was feeling a bit down about my bingo progress for the year, but the beauty of the bingo card is being able to actually SEE the progress. I’ve been making some variation of this list/bingo card for years, highlighting things to make life feel more well lived. Some goals, big and small, some little activities that always make me smile, and of course, trips. You can always count on me for including trips in the mix. This week got the SEE A CONCERT ✅ and the LAS VEGAS WEEKEND ✅. Two birds, one stone and seeing a concert at The Sphere was worth it and then some. Here is what’s cooking this week:
BBQ CHICKEN (15 Minutes)
Sometimes the most simple recipes are the best and I think this BBQ chicken is a testament to exactly that. Could you throw some chicken on the grill with your favorite BBQ sauce and call it a day? You could, or you could add this dijon mustard + seasoning combo to really take it up a notch.
What You’ll Need:
1 1/2 lbs boneless skinless chicken thighs
1 tablespoon olive oil
1 tablespoon dijon mustard
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/2 cup of your favorite BBQ sauce

with a side of grilled asparagus? TASTES LIKE SUMMER. Another super simple preparation, but if you haven’t had grilled asparagus with lemon try this recipe.
SLOW COOKER ENCHILADA QUINOA (Crock Pot)
If I’ve learned anything since implementing ‘Crock Pot Monday’ it’s that TexMex recipes are the household favorites. This has a very similar flavor profile to the enchilada casserole recipe that’s heavy in my rotation, but with the addition of quinoa.
What You’ll Need:
1 15-ounce can black beans
1 15-ounce can yellow corn
2 15-ounce cans mild or medium red enchilada sauce
1 15-ounce can diced fire roasted tomatoes and green chiles (aka Rotel)
1 cup uncooked quinoa
½ cup water
4 ounces cream cheese
salt and pepper to taste
1 cup shredded Mexican style cheese
OPTIONAL TOPPINGS: chopped cilantro, diced tomatoes, diced avocado, sour cream

FIRECRACKER SALMON WITH PEACH SALSA (30 Minutes)
First glance at this recipe and it LOOKS like summer so with Memorial Day weekend on the horizon it felt like to perfect time to introduce a seasonal favorite. This should go without saying, but if you don’t have the bandwidth to make the peach salsa - skip it! The flavor of the salmon stands tall on it’s own and with a simple side of rice this becomes a quick, easy weeknight option that I think will be a crowd favorite.
What You’ll Need:
1 ½ pounds salmon
2 tablespoons avocado oil or olive oil
2 tablespoons reduced-sodium soy sauce
2 tablespoons balsamic vinegar
½ tablespoon honey
3 cloves garlic
1 teaspoon red pepper flakes
½ teaspoon cayenne pepper
1 teaspoon freshly grated ginger
For the peach salsa:
1 avocado
1 peach
3 tablespoons finely diced red onion
1 jalapeño
2 tablespoons finely diced cilantro
1 lime
Salt & freshly ground black pepper

SLOPPY JOE WALKING TACOS
I owe you a little bit of an apology for adding this to the menu this week. When I saw the video on Instagram I immediately hit the save button and thought, sloppy Joe walking tacos? Yes please. The problem came in when I went digging for the recipe, because the creator’s sloppy Joe recipe is a bit of a time investment. And if you have the time in your schedule to spare this week, great, the recipe below definitely looks like it’s worth trying. And if you don’t, you can definitely use your own sloppy Joe starter to put your own spin on the idea.
