Grilled Peach Pizza (30 Minutes)
My husband LIVES for summer peaches so I just surprised him with the absolute best, The Peach Truck subscription. 🍑 This is our 3rd summer getting the Georgia peaches shipped to our front door and the smell alone is divine, but cooking with them is even better. Found this video on Tik Tok that looks easy enough so we’re going to try and replicate using my fav Trader Joe’s pizza crusts.
What You’ll Need:
pizza crust
peaches
mozzarella or Italian blend cheese
basil
burrata
Balsamic glaze or hot honey

Taco Salad (15 Minutes )
One of my favorite things about summer is the BBQ food. The potluck salads, the sides that go perfectly with burgers & dogs 🌭 , and taco salad is high on that list. Making for dinner, because why not? The Tipsy Housewife is known for her “Midwest” style recipes so she was my first resource for this taco salad.
What You’ll Need:
1 lb of ground beef
8 oz of shredded cheese of choice
1 packet of taco seasoning ( 1 oz)
1 head of iceberg lettuce
1.5 cups of finely diced tomatoes (optional)
2 cups of Western Dressing
1 bag of any flavor Doritos (9.5 ounce)
Optional- not in the recipe, but I add kidney beans

Chicken & White Bean Enchiladas with Salsa Verde ( 1 hour 25 Minutes )
*with a few shortcuts to make it quicker
A recipe that takes over an hour isn’t ideal if you have a busy Tuesday, but they only need to bake for 20-30 minutes so if you skip the homemade enchilada sauce you’ll save yourself quite a bit of time. I’ve shared this Roasted Jalapeno version from Target before and it would be the perfect substitute in this recipe.
What You’ll Need:
For the Chicken and White Bean Filling:
1 tsp olive oil
1/4 cup minced white onion
2 cloves garlic, minced
4.5 oz can chopped green chiles
15.5 oz can Navy beans, or Cannellini beans
8 oz cooked shredded chicken breast (*using a rotisserie chicken)
1/4 cup water
1 chicken bullion
1 teaspoon ground cumin
For the Green Chile Enchilada Sauce:
1 teaspoon butter
1/2 cup chopped white onion
2 tbsp flour
7 oz can chopped green chile
2 jalapeños, chopped (I used jarred)
1/2 cup light sour cream
3/4 cup reduced fat Mexican cheese
8 8-inch flour tortillas
chopped fresh cilantro or scallions, or both!

36 Hours in Vegas
When Las Vegas announced the opening of The Sphere I knew a concert there was going to be a must. When Dead & Company announced a run at The Sphere, we immediately purchased tickets. The down side of this trip is that we already have 2 out of town weddings this month, followed by a trip the first weekend in July. For both time and budget purposes, we made the trip as short as feasibly possibly. And by that, we’re packing as much in our itinerary in the 36 hours we’re there. I’ll do a full itinerary breakdown next week, but you’ll get all the behind the scenes on Instagram until then.
Elote Burgers (10 Minutes)
Costco find for the win! AmyLu breakfast sausages are a Costco staple in our house so when I saw they make these elote burgers, immediately added to cart. I always try to have at least one dinner on deck in the freezer for a rainy day. Last week’s Kung Pao Cauliflower from Trader Joe’s and the Kevin’s meals are regulars. What I love about these elote burgers is that they come individually wrapped so you can just as easily grab one for lunch. I found that they cook better on the stove top over the microwave.
BBQ Ribs (3 hours 15 Minutes)
We have no weekend plans when we get back from Vegas so while we unpack and catch up on laundry, these ribs can slow roast. By the time dinner is ready we’ll be more than ready to relax and retire for the evening over a nice home cooked meal.
*A tip in the recipe is to do the long cook the night before and then just finish on the grill day of. Perfect plan if you have a busy weekend!
What You’ll Need:
4 pounds pork spareribs
1 cup brown sugar
½ cup chile sauce
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper

VEGETABLE OF THE WEEK: GRILLED CORN WITH DILL
This time of year a lot of us live off the grill so I thought I would introduce a summer series devoted entirely to sides. I included this corn recipe in The Memorial Day Edit and it was incredible so be sure to add to your list especially with sweet corn season ahead.
What You’ll Need:
This should go without saying, but use the amount of corn cobs you need for your household. We are cooking for 2 so I’ll half this recipe so we have leftovers.
10 medium ears sweet corn in husks
1 cup butter, softened
2 tablespoons minced fresh dill or 2 teaspoons dill weed
2 tablespoons minced fresh chives
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/4 teaspoon pepper
