HAPPY VALENTINE’S DAY | As a self-proclaimed hopeless romantic, I always look forward to the opportunity to celebrate love. I could skip the store bought flower social media part and put more emphasis on telling our people we love them.
Then telling them again.
I’ll keep this short and sweet this week and get straight to the good stuff—you’re here for the love, and I’ve got plenty to share.
Here’s What’s Cooking This Week:
Ina Garten’s Roast Chicken (1 Hour 30 Minutes)
Our Valentine’s Day will be celebrated with heart shaped pizza, but in the “special” dinner category this recipe is #1. On the streets, this is known as “engagement chicken” and is rumored to be the meal Meghan Markle made for Prince Harry the night he proposed. Don’t let the whole chicken aspect intimidate you, this is beginner level easy.
What You’ll Need:
1 (5 to 6 pound) roasting chicken
Salt + pepper
1 large bunch of fresh thyme
1 lemon, halved
1 head of garlic
2 tablespoons butter
1 large yellow onion
4 carrots
1 bulb of fennel

Chicken Enchilada Casserole (Crock Pot)
I would apologize for how often this recipe has made these weekly menus, but then again that’s what you’re here for. 10 minutes of prep (and the sauté step is worth the extra effort, I promise) and then it’s a set it and forget it situation. Tex Mex at it’s best.
What You’ll Need:
1 tablespoon olive oil
1 yellow onion
2 cloves garlic
1 1/2 lbs boneless skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon oregano
1 15 oz jar enchilada sauce (I love this jalapeno version from Target)
1 15 oz can black beans
6 corn tortillas, cut into bite sized pieces
1/2 cup shredded cheddar cheese
Finely chopped cilantro to top
OPTIONAL: Lime wedges and sour cream to serve

Sheet Pan Chili Crisp Salmon ( 45 Minutes)
This recipe feels a little “steppy” so it might not make sense for a busy weeknight, but if you have the time it is well worth it in the end.
What You’ll Need:
For the sesame-scallion rice:
1 1/2 cups white rice
1 tablespoon sesame oil
1 bunch scallions
2 1/2 cups low-sodium chicken bone broth or stock (or, like me, use a big scoop of Better than Bouillon plus 2 1/2 cups water)
For the salmon and snap peas:
4 (6-ounce) salmon filets (skin on or off)
Kosher salt and freshly ground black pepper
1 cup panko breadcrumbs
1 jar chili crisp
1 pound snap peas
1/2 cup mayonnaise
1 lime, cut into 6 wedges

Juicy Skillet Pork Chops ( 45 Minutes )
Pork chops were a dinner staple growing up, but the only seasonings my mom had in our kitchen were salt and pepper. There might have a bottle of Lawry’s a few years past it’s expiration, so needless to say I didn’t inherit any cooking genes. This recipe has the same nostalgic idea, but better.
What You’ll Need:
4 pork chops, about 6 ounces each, 1-inch thick
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon avocado oil or vegetable oil
Pan Sauce
1 cup low-sodium chicken stock
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Buffalo Chicken Burgers (20 Minutes)
Pinch of Yum lured me in with Buffalo Chicken (my favorite), but she sold me on this recipe with it’s 20 minute cook time. Homemade burgers always hit the spot and the whipped feta spread looks like it is going to be a delicious combo.
What You’ll Need:
1 lb. ground chicken
1/2 cup panko breadcrumbs
1/3 cup hot sauce (I used Frank’s Red Hot)
1/2 teaspoon garlic powder
1/2 teaspoon salt
Whipped Feta Spread
6 ounces feta cheese
4 ounces cream cheese
1/4 cup Greek yogurt
2 tablespoons olive oil
2 tablespoons water
Extra Stuff
2 tablespoons melted butter + 2 tablespoons hot sauce for brushing
Buns
Lettuce

Walking Tacos ( 20 Minutes )
By now you should have come to expect tacos on Fridays, but I still like to throw a few curve balls. And who doesn’t love walking tacos?
What You’ll Need:
1 pound ground beef
1/2 cup diced onion
1 (1 ounce) taco seasoning packet, or homemade taco seasoning
6-8 snack sized bags of Fritos or Doritos
TOPPINGS OF CHOICE:
black beans
lettuce
tomato
shredded cheese
sour cream
salsa
guacamole
