Chimichurri: A Love-Hate Kitchen Romance
Every time the food processor comes out, a small part of John dies inside. Sure, it's a pain to clean—but when it comes to chimichurri, there's just no substitute. This recipe is absolutely worth the extra rinse cycle. The marinade is bursting with bold, herby flavor, the chicken cooks up juicy and perfect, and the leftover sauce doubles as the base for a vibrant couscous salad. Fresh is the best way to describe it, flavorful, is why this one’s going on repeat.
What You’ll Need:
1 cup fresh cilantro
2/3 cup fresh parsley
1/4 cup fresh oregano
2 garlic cloves
1/4 cup red wine vinegar
2/3 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1 pound chicken thighs
couscous salad
2 cups cooked couscous
¼ cup chimichurri
1 cup cherry tomatoes
⅓ cup crumbled feta cheese
3 tablespoons chopped chives

2️⃣ THE WEDDING PEOPLE
I read 5 books in the month of May + added 2 audiobooks, both of which changed my mind about how I feel about audiobooks, but there were 2 five star reads. The Wedding People by Alison Espach was one of the most unexpected stories. A divorce, depression, losing the will to live, and a chance elevator run in with a bride planning a million dollar wedding, and the funny interactions that follow suit. It was not at all what I expected, but a story about life, love and ends with all the warm and fuzzies.

3️⃣ SAY YOU’LL REMEMBER ME
Dare I say this was my favorite Abby Jimenez book? Sure, the romance writer is a bit predictable but there’s a reason she has a cult following. Your girl loves a happy ending and this one didn’t disappoint. A sexy vet, the perfect date, and really bad timing.

4️⃣ WINK LIP LINER
If there is one lip shade you need in your makeup lineup it’s that perfect pinky nude shade and I think I found it. It wears beautifully on it’s own, but it’s also become to only lip liner I ever wear as it pairs perfectly with just about every shade other than red.

I wore this dress to Carbone in NYC last summer, it’s made appearances on date nights, girls nights, and last month I brought it to Vegas, further proving it’s one of the best dresses in my closet. BONUS: A SHOW I’M LOVING
I just finished the first season of Hacks on HBO Max and loving it! A legendary Las Vegas comedian teams up with a struggling young writer to reinvent her act—and themselves. The result is witty, hilarious and heartfelt. There are 4 seasons to binge and it just renewed for another.
I lost my joy for cooking the last couple of years because I would get overwhelmed with the shopping, planning, prepping and cooking. The last two weeks I've sat down on Sunday morning, looked through your past newsletters and planned our weekly menus. It's made cooking more fun, the recipes don't stress me out and our 3 year old & 6 year old daughters will eat it. The chimichurri chicken was outstanding and I've got Mississippi chicken in the crockpot as I'm typing this.
